E. coli O157:H7 & STEC Sanitation for Produce, Meat & Food Plants
Shiga toxin-producing E. coli (STEC), including O157:H7, has an extremely low infectious dose and is linked to leafy greens, sprouts, fresh produce and ground beef. In a packing house or processing plant, control centres on wash water, flumes, conveyors, harvest bins and raw-to-RTE separation. We strip, clean, sanitize and verify these systems to get you cleared to pack again.

Florida produce and the E. coli risk
Hillsborough County's Plant City and Dover area is known as the Winter Strawberry Capital of the World, and the Ruskin, Wimauma and Immokalee regions pack tomatoes, peppers and vegetables for the nation. Packing lines run hard in season, and wash water that isn't managed becomes the vehicle that spreads one contaminated lot across a whole run.
End-of-season and pre-season deep sanitation, plus rapid response when a lot tests positive, are where an outside crew pays for itself.
What our STEC cleanup covers
Full drain-down and strip of flumes and dump tanks, foam-clean of conveyors and frames, bin and tote washing, cold-room floor and wall sanitation, and treatment of boot and hand-wash stations. Food-contact surfaces get a no-rinse food-contact sanitizer at label concentration; environmental surfaces get EPA-registered disinfectant labelled for E. coli O157:H7.
Return to operation
Our E. coli response & restart plan
1. Isolate & hold
Affected lines, rooms and product are tagged out. We map zones 1–4 with your QA lead so nothing is cleaned in the wrong order.
2. Dry pick-up & gross removal
Product, debris and soil removed. Dry facilities stay dry — HEPA vacuums and brushes, no water introduced where Salmonella risk is high.
3. Strip-down & foam wash
Guards, belts, scrapers and removable parts pulled. Alkaline or enzymatic foam breaks biofilm; top-down, back-to-front rinse.
4. Sanitize & disinfect
EPA-registered disinfectants on environmental surfaces and food-contact sanitizers at label concentration and full contact time, verified with test strips.
5. Verify
ATP swabs on every food-contact surface, with re-clean on any fail. Your lab or third party runs pathogen swabs; we re-treat positives.
6. Document & hand back
A written record of areas, chemistries, concentrations, dwell times, ATP readings and crew — the file your auditor, FDA, USDA FSIS or FDACS inspector asks for.

Questions
E. coli response FAQ
- Do you do pre-season packing house sanitation?
- Yes. Pre-season and end-of-season deep cleans of packing lines, flumes, coolers and bins are scheduled ahead — book early, as Florida's season is short.
- Is E. coli harder to kill than other bacteria?
- Not on clean surfaces — the challenge is the low infectious dose and organic soil protecting it. Thorough cleaning before sanitizing is what makes the chemistry work.
- Can you help after a product recall?
- Yes. See our recall restart page — we document every step to support your corrective-action and regulator follow-up.
